Miami Inspired Dinner!

SRFL_JJ_0531We have some amazing Miami chicks and we are heading back to beach on February 25, 2012!  It came to mind as I was poking around our calendar yesterday.  Even though home base for me is Omaha, I travel to Siesta Key every year with my daughters. It’s been an annual event for over 15 years actually!   We parasail, I scuba dive, I run the beaches and swim for days!  It’s a relaxing weekend with my girls and a great chance to train in the warm Florida sunshine.  With food, I am always spoiled - I have had fresh fish every day - the seasonal  produce and sea food abound so we are taking advantage of the citrus, berries, and fresh fish fillets from the local market!


In honor of Florida and our rad chicks down south, I made this tropical marinade and chicken combo for my girls.  Tasty, easy, and fresh it will hold me over until I go back!  I had a little sangria with mine, just to mix it up. 

Ingredients:
1/3 cup Soy Sauce
1 small can of Pineapple tidbits and juice
1 green pepper diced
1 orange pepper diced
2 tablespoons minced garlic
1 1/2 ripe banana
2 teaspoons Mrs. Dash original seasonings
1 teaspoon onion powder
Sea Salt (to taste)
Pepper (to taste)
1 lb chicken

Prep and Cook:
Soak ingredients in the marinade for at least two hours.  Chicken on the grill and the veggies and fruit on the grill on a piece of heavy duty tin foil.  Cook until tender and juicy (or until your drink runs dry).

I put the chicken over some cooked quinoa and loaded the top with the fruit and veggies like salsa.  It was delicious!

Get creative with your cooking.  It's fun to try new flavors.  We even decided that we'd try some strawberries next time in the marinade to add something extra sweet.
